Vegan Peanut Butter Pie for One

I know.  This is a pathetic little example of a smashing baking endeavor.  But I told you, I'm a bad Blog-Picture-Taker.  I get so amped up on eating the food, I forget to take the pic.  So here's the recipe for you for a darling little vegan peabut butter pie for one.  Did I mention its gluten free?

1/4 of a 14oz package of silken tofu
3 T raw honey (Trader Joe's, baby!)
1 T water

Blend together in a mini prep Cuisinart or blender until smooth.

Crust

3 T GF brown crisped rice
pinch of sea salt or pink himalayan salt
pinch baking soda
1t safflour oil
1/2 t agave nectar 

Crush brown rice cereal in a bag and combine with other ingredients.  Mash in botton of a small ramekin.  Pour peanut butter pie mixture on top and bake for 25 minutes at 350.

I think its better chilled but that's just me.  This is hard to resist...
