Fooled around and fell in love...

Summer just calls for a light fruity dessert.  I was first introduced to fools by Nigella Lawson of course.  Its super simple and really light and refreshing.  Its basically fruit mashed up with sugar and folded into billowy whipped cream.  

In this case, since I have been avoiding most dairy, I used soy whip and it was super tasty.  

Here's what I did; I took half a bag of frozen raspberries and microwaved them for about a minute to soften.  

Then I added 2 tablespoons of xylitol (you could also do agave) and stirred.  

I took a 10oz box of the soy whip and whipped it in a mixer for 3 minutes. 

Then just fold and refrigerate. 

Super light, yummy and perfect for a hot night or an easy BBQ dessert for all your Labor Day BBQ's!  PS; If you crumble up some merengue and fold it into the mix, it becomes a British dessert called Eton Mess and its so good, its just wrong.  Fluff and fold away!
